Spanakopita is a tasty Greek savoury pie filled with spinach, eggs, and feta. It’s likely that the Spanakopita has comes from the Ottoman Empire cuisine, probably during the occupation of Greece began since the fifteenth Century.

Ingredients

1Kg spinach
1 medium onion chopped
½ cup chopped parsley
Cup of cut spring onions
Tablespoon chopped fennel or dill
½ teaspoon ground nutmeg
½ cup cottage cheese
1 cup of crumbled feta cheese
½ cup parmesan cheese
4 beaten eggs
Salt and pepper
Filo pastry
Butter 200gm

Method

Wash spinach, clean and cut away coarse stems and chop and put in saucepan and water and cook for about 7 minutes (or just use frozen spinach)

Fry onions for 5-10 minute until translucent

Add in spring onions and cook for further 5 minutes

Put drained spinach in large mixing bowl and other ingredients

Mix in eggs and add salt to taste

Melt butter

Brush a 25x30cm baking dish with butter.

Sheet by sheet brush with butter and layer it in baking dish starting with the bottom and progressively adding in sheets length wise and across overhanging the filo sheets. 

Add mixture into the baking dish. Progressively pull the filo over the mix. Brush each with butter.

Bake in oven for about 45m at 180◦ until puffed and slightly golden brown

Serve with Greek salad.
