My repertoire of cakes is minimal.  I or should I say she who must be obeyed outsourced main courses predominantly to me. This one is fantastic and I have shared it with many friends. It is equally simple and appealing and rewarding. One of my male friends now uses it with is very young granddaughter as an exercise in cooking. (About $6 2020 or 50c a slice) Time about 20 minute to prepare.

Method

In a bowl beat sugar and oil together
Slowly add one egg at a time while mixing
Add flour, bicarbonate of soda, baking powder & cinnamon
Mix in grated carrots and walnuts
Pour into prepared cake tin and bake at 180ᵒC for 45 minutes. Check after 40 minute.
Icing is made by mixing ingredients and toping cake when cold.

Ingredients

1 cup sugar
¾ cup oil
1 tsp bicarbonate of soda
1 tsp baking powder
2 eggs
1 cup of sifted plain flour
3 cups of grated carrots
1 tsp ground cinnamon
¾ cup chopped walnuts

Icing sugar

2tbs soft butter
125g cream cheese
1 cup icing sugar
1 tsp vanilla essence
